Chia Seed Pudding

It is beautiful out and I would bet that it was still summer if the leaves on the trees weren't changing colors and falling off. This PNW weather is crazy, 47 at night and then 86 in the day time and this change happens in a matter of a few short hours. I have been running around crazy with my practicum, a job I applied for, clients and volunteer work. I told you though, that I would set time aside to blog for you & here I am!

I have now taught 2 classes of the 5 I will teach for my practicum. The 1st one went really well and I had about 17 people show up. The 2nd went just as great and I had almost the same amount of people. I made all sorts of goodies and I am going to feature some of them in this blog post. I had a participant in the class request chia seed pudding so that is what the blog post will consist of!

For those of you who don't know what the heck a chia seed is, let me just tell you. You may be thinking chia pets, chai orrrr... you may have not the slightest idea as to what I am talking about. Don't you worry, I am here to explain and send you on your way with a delicious & easy recipe that calls for these awesome seeds. Chia seeds are a black (or white) seed that is super tiny. They are hard and when you add the to liquid, they expand and absorb the liquid that is around them. They take to whatever taste is around them as well. This means you can add them to basically anything and not worry about them ruining the taste. In my book, chia seeds are a superpower seed. They are good for your heart, brain, cells and.... here, let me just name a few:

  • lower blood pressure

  • anti-inflammatory

  • high in antioxidants, vitamins and minerals

  • high fiber food (regulate your bathroom visits...)

  • 60% omega-3 fatty acids & a great source of ALA (awesome for brain health)

  • liver-protecting

  • contain 19 of the 22 amino acids, whoaaaa

Okay, so I assume you get the point, these seeds are A.W.E.S.O.M.E. They fill you up when you're feeling low. They add a little boost to simple foods. They are pretty cheap. They are so extremely versatile. So here are a few ways you can use them:

  • add to water, kombucha, juice

  • egg replacers

  • smoothies

  • salads

  • baking

  • && chia seed pudding, which brings me to the recipe!

 

Chia Seed Pudding

3 T. Chia seeds

a little less than a cup of nut mylk

dash of vanilla

1 banana

1/2 tsp. matcha

1 tsp. sunbather (unsweetened)

-blend all ingredients (except chia seeds) in your blender, I use a vitamix

-add chia seeds to a mason jar & pour mixture into the jar

-stir around with your stirrer of choice

-put the lid on the jar & shake 2 more times (5 minutes in between)

-place in the fridge and come back for it in an hour

-don't forget about it, it's waiting for you!
